WHY IT'S CRAVED

English soils are great in developing the apply and citrusy acidity that's present in this Blanc de Blancs, and the ageing process that winemaker Charlie utilises helps to balance the fresh acidity with savory nutty and biscuity flavours. The gentle bubbles add to the whole by creating a creamy mouth-feel. 

The grapes that make this wine are all grown on Gusbourne estate, allowing the wine to reflect the local surroundings. Charlies approach to his craft is one of minimal interference, and after fermentation the wines are left to rest for at least 3 years. This allows the wine to develop the depth of flavour that has made Gusbourne one of the most critically acclaimed vineyards in Britain. 

HOW WE LIKE IT

On it's own on a hot summer's day or with air-dried ham or fresh seafood like ceviche or oysters.
