MADE BY NETTLEBED CREAMERY IN HENLEY-ON-THAMES, OXFORDSHIRE

WHY IT'S CRAVED
Named after the town where Nettlebed Creamery sources the triple cream that makes up this soft, unpasteurised cheese. It is based loosely from the French Chaource-style cheese. Bix is creamy and not as crumbly as a lot of unpasteurised cheeses tend to be. The texture in the middle is close to clotted cream and has a very strong flavour with similarities to Roquefort.
