Joe Schneider, the creator of one of very few unpasteurized blue cheeses made in England, is highly experienced in his field having previously worked for the likes of Daylesford and Old Plawhatch. Since starting his own farm on Welbeck Estate in Nottinghamshire, Joe has been keen to branch out and experiment with his techniques, forever striving for a more savory and complex flavour combination.
