Natural born baker Catilin Paxton fell in love with chocolates while training to become a pastry chef at Le Cordon Bleu in Paris. When she graduated she decided to follow her dream and launch her own chocolate company.
In an industry steeped in tradition, Caitlin decided to do something quite different. Her signature chocolates are not truffles but thins, and instead of ganache each thin is infused with bold flavour combination and features a stunning design.
Caitlin makes all her chocolates in her Shoreditch shop by hand in small batches. What keeps her inspired is to find innovative flavour combinations (mango and paprika!), and based on that flavour, come up with a design that hints at what you're about to taste, daring you to bite in.
