Hill Farm Dairy

Neither Caroline nor Will were born into farming, and yet in 2006 they decided to move to Hill Farm in the Somerset countryside. Having had previous experience working behind the counter at Neal’s Yard and working alongside Mary Holbrook (creator of Tymsboro), Caroline began establishing a herd and making her own goats cheese.

Although not the original plan, Caroline realised she wanted to control the cheese making process from the word ‘go’ and as such, Will went from practicing law to becoming a farmer. Since then their herd has expanded, now with over 100 goats producing their floral and creamy Stawley goats cheese. Its delicious taste is thought to be due to the meticulous planning both Will and Caroline put into every detail of the cheese making process, from start to finish.
